  • 2 egg yolks

Instructions

  1. Prepare the apple cider reduction by boiling it until thickened; set aside to cool.
  2. In a bowl, mix cold cream cheese with sugar and vanilla until smooth. Add cooled apple cider reduction.
  3. Cream butter and sugars together, then incorporate egg yolks and remaining vanilla.
  4. Mix dry ingredients and gradually add to the wet mixture until combined.
  5. Preheat oven to 350°F (175°C). Shape cookie dough around cheesecake filling, forming balls.
  6. Bake for about 11 minutes until edges are lightly golden. Brush warm cookies with melted butter and sprinkle with spiced sugar.
